Can I just use a template?

You can, but templates describe a generic business. The risk is that yours does something the template does not cover, which is exactly when it matters.

Do I really need a privacy policy?

If you collect any personal data, including emails, almost certainly yes, and in many places it is legally required.

My site already has policies. Should I have them checked?

If they were copied or written years ago, yes. The most common problem is a policy that no longer matches what the business actually does.
